"Two things about Temple put it above all other health farms I have visited — the first is the calm and peace it affords, and the second is the cuisine. Over a couple of days, we feasted on salmon, avocado and mango terrine — as Elysian as it sounds — beautiful bouillabaisse, and seared sea bass served atop a Spanish citrus salad. A vegetarian tikka masala — well, we were trying to be good — was fragrant and delicious. Tempura of fish and vegetable was light with a subtle hint of spice. We ate perfect scallops and a gorgeous chicken-liver parfait, smoked salmon consomme and garden-lavender creme brulee."

Temple is known as a country retreat and a spa, but it is very quickly going to be known as a fine restaurant. Jamie Hagan is heading up the kitchen in Temple, Bernadette and Declan Fagan’s brilliant spa hotel which has seamlessly grown to 20 rooms and a fully functioning restaurant, a far cry from the days when it was a tiny B&B in the old Temple house itself. But what hasn’t changed an iota is the fact that Mr and Mrs Fagan produce terrific hospitality and offer food that is luxuriously healthful. Mr Hagan has latched onto their vision of healthful food that is in no way austere with ease, and this is already a mature, soulful kitchen. Seared wild pigeon and rabbit loin with muscat dressing is an ace dish; a duo of cod and sea bream with a herb crust has a fine rocket, olive and bacon salad and is indicative of the sort of flavour combinations he likes to make – organic lamb with a potato and shallot crust; roast chicken with green beans and a thyme jus; lemon sole with red onions and baby capers. We like the modesty of the food, and the comfortable modesty of the dining room, and Temple is a destination restaurant for the Midlands, irrespective of whether you stay at Temple or are just coming for dinner.

"Temple Spa has been a hideaway for those in the know for years. A recent expansion and the opening of the restaurant to the public, makes this utopia more accessible. Organic produce, fine meats and seafood prepared with care and simplicity and served with flair make it a winner, but do stay over if possible, the treatments and general ambiance make Temple Spa very special indeed."

We dressed for dinner, perused the wine list and enjoyed a stunning three course dinner complete with impeccable restaurant service.
